Avocado Stuffed Potato
This baked potato is just delicious and
goes well with most any dish,
Fish Chicken and Beef
2 Large sized sweet or regular potatoes
1 avocado
1 tablespoon of butter
1 medium sized onion chopped very finely
salt and pepper
Bake whole, unpeeled potatoes in a 425 f oven
until soft, but firm
enough to stuff. Cool
Cut evenly in half and scoop out flesh, allowing
a small rim inside potato for shape.
Blend or mash avocado with potato
flesh and mix with butter, onion and salt and pepper
Replace in potato shell and top with a little bit of
butter. Bake at 400 f until heated through and lightly
brown on top. Sprinkle with paprika.
Top with just a spoon full of sour cream and enjoy!!!
